When I'm in a hurry for something to eat, I like to eat this shrimp and couscous. Only takes 15 minutes to prepare and pretty filling.

some couscous
some shrimp (5-8)
some olive oil
some Old Bay seasoning
some peas (optional)

  1. If using frozen shrimp, put shrimp in a bowl of cold water to thaw.
  2. Set pot of water on stove to boil (follow instructions on your couscous package). Once water is boiling, throw in the couscous, put the lid on and remove from heat.
  3. After about 10 minutes, the shrimp should be flexible enough to take the shell off. So remove the shells.
  4. Heat a bit of olive oil and stir-fry the shrimp until pink and cooked through. Sprinkle on some Old Bay seasoning while they're cooking.
  5. If you're using peas, saute the peas along with the shrimp to heat through.
  6. If enough time has passed, fluff the couscous, toss the finished shrimp (and peas if you're using them) on top and eat.

And if you're willing to take an extra moment, mince some garlic and saute that with the shrimp too.

Shrimp, squid, and scallops are my favorite types of protein.

squid...I don't hear that listed as a favorite too often. I've only ever prepared shrimp. Are scallops hard to do?

scallops are simple! you can get them from Trader Joe's or a similar store (frozen, usually); microwave them a bit to defrost and then put them in a skillet with a bit of water and cook for a bit until they're translucent (w/some lemon, maybe.) Then they're excellent in homemade pad thai, or with pasta/alfredo/veggies, or just some spices :)

That helps me not be intimidated by scallops. Thanks!

This sounds delicious! Must try it.

I have a similar recipe you might like:

Shrimp and Couscous

1 box plain couscous
1 yellow onion, chopped fine
3 cloves garlic, smashed
3 tablespoons olive oil
1 can (14 ozs.) diced tomatoes
½ small can chopped black olives
1 bunch flat-leaf parsley, chopped
salt/pepper

Prepare couscous according to pkg. Directions.

Add garlic to skillet with oil and heat over medium heat, turning garlic often so it doesn’t burn. When oil is hot, add onions and saute until tender and just brown (stir often!). Add tomatoes, juice and all, and bring to boil. Reduce liquid by half. Remove from heat.

Break up couscous as directed. Add other ingredients and mix well. Add parsley.

Shrimp

1 lb. Shrimp
½ cup olive oil
2 tbsp. Emeril’s seasoning
2 tbsp lemon juice
2 tbs. Fresh parsley, chopped
1 tbsp. Honey
1 tbsp. Soy sauce

Mix marinade and add shrimp. Marinate for 30 minutes (in fridge). Bake at 350 degrees for 10 minutes.

CAUTION: THERE WILL BE LOTS OF SMOKE FROM THE OIL!!!

So are you baking everything or just the marinated shrimp?

Just the shrimp. It's served over the couscous. Sorry, I didn't make that clear.

Yum! I'll have to try that, though I like cooking my couscous in chicken broth.

Damn, that's a nice meal for 15 minutes... it takes me 45 minutes to make a salad!

Yeah...when I left college, the thing I missed most about the dining hall was the salad bar. It's a pain to cut up that many things for a salad just for myself!

I'm a new reader to your lj and I'm glad you've posted this as I'm trying to find an easy couscous recipe. (I've never cooked couscous before)

Welcome! I didn't even really talk about the couscous. But wow is basic couscous easy! If you search online for more couscous recipes, you'll find a ton of options. My boyfriend likes to throw in raisins.
