This sounds delicious! Must try it.

I have a similar recipe you might like:

Shrimp and Couscous

1 box plain couscous
1 yellow onion, chopped fine
3 cloves garlic, smashed
3 tablespoons olive oil
1 can (14 ozs.) diced tomatoes
½ small can chopped black olives
1 bunch flat-leaf parsley, chopped
salt/pepper

Prepare couscous according to pkg. Directions.

Add garlic to skillet with oil and heat over medium heat, turning garlic often so it doesn’t burn. When oil is hot, add onions and saute until tender and just brown (stir often!). Add tomatoes, juice and all, and bring to boil. Reduce liquid by half. Remove from heat.

Break up couscous as directed. Add other ingredients and mix well. Add parsley.

Shrimp

1 lb. Shrimp
½ cup olive oil
2 tbsp. Emeril’s seasoning
2 tbsp lemon juice
2 tbs. Fresh parsley, chopped
1 tbsp. Honey
1 tbsp. Soy sauce

Mix marinade and add shrimp. Marinate for 30 minutes (in fridge). Bake at 350 degrees for 10 minutes.

CAUTION: THERE WILL BE LOTS OF SMOKE FROM THE OIL!!!
