Vegetables are fun to eat -- especially when you add bacon. Here's a good one for kale. This also works with spinach, collard greens, or chard in place of kale.

( recipe for kale with bacon and onion )

Rinse zucchini and cut into coin slices. Salt and pepper both sides. Heat some olive oil in a pan and then saute both sides until it reaches your desired tenderness (about 5 minutes)
