fitfool: (molten lava cake)
One of my macaroon-loving friends loved these so much he says they're better than the ones he gets at Whole Foods Market. I made these as gifts though I sampled a few myself too.

Need tips to help me figure out where I went wrong. I wanted falafels and searched online for a whole bunch of recipes. I took the parts of each that I liked or had on hand. Looked great while mixing it. Smelled great while baking it. But then they came out too dry and burnt. Did I leave out something important? (Is the egg to keep it moist?) Any advice welcome.

An anonymous comment led to www.nicemeal.com which has a bunch of Chinese recipes. I found one for Fried Potato Patties. Having tried making Two-Potato Latkes and Lefse (Norwegian Potato Pancakes), I of course couldn't resist trying out yet another version of a potato pancake so I adapted this one a bit to come up with these Chinese Potato Patties. Delicious. Kinda like having mashed potato nuggets. The little bits of water chestnuts gave little surprises of crunchiness mixed with the 'meaty' texture of the mushrooms and the smoothness of the mashed potato texture. Well worth the effort for me. I ended up with 18 patties and I think I ate all but 4 of them.

Cold potato soup? Sounds strange...like someone didn't feel like heating up the leftovers. But I wanted to taste this and the recipe didn't look too intimidating. Besides, it's so much fun to say vichyssoise (Vee-shee-SWAHZ). I had some leeks I was trying to use up. Loved this recipe (thanks [livejournal.com profile] martygreene!) and I liked that it didn't need the butter called for in a lot of other vichyssoise recipes. It tasted good both hot and cold (though I still prefer it hot).

Here's a quick, low-fat chicken recipe that [livejournal.com profile] aiofe suggested a while ago. This is another recipe for the 50 New Dishes challenge this year for me.

Quick and refreshing breakfast or snack. As much as I love smoothies, I never tried making one myself. What was I waiting for?
I'm trying to work my way up to baking bread from scratch. I mostly just use my bread machine for now. This recipe was temptingly easy and I'm so glad [livejournal.com profile] ballykissangel posted it at http://www.livejournal.com/community/food_porn/1937006.html

I had long assumed I didn't like macaroni and cheese because I had associated it with that bright orange Kraft Mac n Cheese stuff. Plus I didn't really care for cheese until my 20s. But then I had some of Annie's Shells and Cheese and liked that a lot. Years later, it finally occurs to me to try making the macaroni & cheese recipe listed on the back of this box of pasta. I adapted it to use half as much butter and cheese. Does that bring it into the neighborhood of being healthy? I hope so because I liked how this tasted and I still have more elbows pasta in the cupboard.

Although this is an old standard, it's new to me so it's on my list for 50 new recipes for 2006. Come join the fun!

[livejournal.com profile] starkeymonster roped me into the party. The idea is to try making 50 recipes you've never tried before this year and post about them. You can follow along at http://fitfool.livejournal.com/tag/food2006

Another hit from Cooking Light. Really big hit. Time consuming prep but delicious and satisfying. Well worth the time on a weekend.

This isn't an authentic chow foon recipe by any means but I came up with this one night while I was staring at the various jars of Chinese sauces that I didn't quite know what to do with. My mom had given me this bottle of XO that just scared me so it's been sitting unused in my fridge for months. But I hate to waste food so I try to figure out a way to eat things unless I really hate it. Good thing I played around with this. Michael loved these so much that he's bumped these to the top of his list of favorite noodles (unseating the mafaldine con funghi). I still prefer the mushrooms over pasta but I enjoyed this enough that we made it again the next day. Plus this dish was faster to whip up and is a great way to use up leftover chicken.
