Irish Soda Bread (easy!)

I'm trying to work my way up to baking bread from scratch. I mostly just use my bread machine for now. This recipe was temptingly easy and I'm so glad

Ingredients:
3 cups all purpose flour
1 tsp salt
1 tsp baking soda
400 ml buttermilk

Irish Soda Bread
Ingredients:
3 cups all purpose flour
1 tsp salt
1 tsp baking soda
400 ml buttermilk
- Mix the the flour, salt, and baking soda together in a large bowl. Make a well in the centre and add just under half of the buttermilk and mix. The mixture should be firm and dryish.
- Add more of the buttermilk until the mixture almost spreads out on its own (it will be very sticky).
- Divide the mixture into two equal parts and shape into rounds (no kneading is needed). Place on a lightly greased and floured baking tray. Cut a deep cross with a sharp knife on the top of each round. [Does cutting the top do anything? It's so wet that the cut just seems to close back up.]
- Place in a preheated oven at 400F for 35 to 40 minutes. Test by tapping (it should make a hollow sound).
- When done, remove from oven and cool on a wire rack (the loaves will be crusty). If you want a softer crust, wrap the loaves in clean tea towels then place on wire rack.
If you happen to have some stew handy, these loaves make for very nice bread bowls (hollow out a circle in the middle). - We didn't have any stew handy so we just sliced ours up but the next day dipped it in soup and found that really satisfying.
