Whenever I have ripe bananas, I almost always make Banana Chocolate Nut Muffins (from [livejournal.com profile] mellybrelly!) but when this batch of bananas were ripening, I had made a bunch of muffins recently so I wanted to make something different. Saw this recipe for banana cookies and decided to give it a try. Simple and pretty good. But I have to admit, my heart was more into the muffins than the cookies. Luckily my roommate liked them and ate a bunch of them.

Banana Cookies

Ingredients:
1/2 cup of unsalted butter, room temperature
1 cup of sugar
1 egg, room temperature
1 cup of mashed bananas (about 2 ½ large bananas)
1 teaspoon of baking soda
2 cups of flour
pinch of salt
1/2 teaspoon of ground cinnamon
1/2 teaspoon of ground mace or nutmeg
1/2 teaspoon of ground cloves
1 cup of pecans (walnuts and chocolate chips are fine alternatives)


  1. Preheat the oven to 350°F. Cream the butter and sugar together until light and fluffy. Add the egg and continue to beat until the mixture is light and fluffy.

  2. In a bowl, mix the mashed bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.

  3. Mix the banana mixture into the butter mixture. Mix together the flour, salt, and spices and sift into the butter and banana mixture and mix until just combined.

  4. Fold into the batter the pecans or chocolate chips if using. Drop in dollops onto parchment paper-lined baking sheet. Bake for 11-13 minutes or until nicely golden brown. Let cool on wire racks.

Makes about 30 cookies.

mm...so they ripen quickly? I keep buying bananas while they're still just turning yellow and then I need to wait for them to get really ripe before I bake with them. Sounds like New Orleans weather might speed that part up.

We keep the house at 85*, and I'm used to it so kinda forget it's that warm in here until the bananas turn brown in a day or two. The downside is that anywhere else I go I'm freezing because they keep the A/C turned down to, oh, say, 75*.

yeah...I was intrigued by having banana cookies too. They weren't that crunchy actually. On the softer end of the cookie scale.

Yum, those look so good. I'll have to try making them, since I have a couple of very ripe bananas that are sitting on my table begging me to do something with them. I'll have one and then give the rest away to my coworkers, since cookies are on the list of 'foods that one absolutely must not eat after 3pm for losing weight and maintaining stable blood sugar.' Plus, I'm keeping a food journal that my nutritionist reviews and eating more than one of these may result in a shouting match (just kidding).

I still favor the muffin recipe over the cookies even though it was neat to try the banana cookies. But I imagine muffins aren't any healthier than cookies. (then again, that muffin recipe had less butter and sugar than this cookie recipe I think).

ooh. Unusual mix of flavors but...bacon makes everything better, yeah? Bacon banana cookies with a maple icing glaze. Maybe that's too much.
