I usually follow this recipe for lasagna: http://www.livejournal.com/users/fitfool/19968.html
but a few months ago, a friend brought over this lasagna: http://www.livejournal.com/users/fitfool/32175.html

His was so delicious I started adding a few more things to my regular recipe though I forgot to add garlic this time around. Tasty and I think reasonably healthy. Are there sites where I can plug in ingredients and find out what the nutritional breakdown turns out to be?

Spinach and Mushroom Turkey Lasagna

1 container of ricotta cheese (32 oz)
1 egg
1 tsp basil
some sliced mushrooms (I think I used about 5 oz of sliced white mushrooms)
some spinach (washed and big stems removed) (about half a pound?)
1 jar spaghetti sauce (28 oz)
1 small can of tomato sauce (8 oz) (optional) (sometimes even 2 of these cans)
1 pound of ground turkey or ground beef (cooked, crumbled, drained)
1 box of oven-ready lasagna pasta (easiest to just follow the box’s instructions)

  1. In mixing bowl, mix ricotta cheese, egg, and basil.
  2. In big pan, brown the ground turkey and drain off any fat. Set aside.
  3. Saute some sliced mushrooms and then wilt some spinach leaves over that.
  4. Then mix in spaghetti sauce and tomato sauce (if using). Add back the ground turkey. Mix everything together.
  5. In a 9x13” pan, ladle in a layer of the sauce.
  6. Put 3-4 pieces of the pasta pieces into the pan.
  7. Spread a layer of ricotta cheese.
  8. Spread a layer of the sauce. Cover the pasta strips completely.
  9. Sprinkle on some shredded mozzarella cheese.
  10. Put down another layer of pasta strips. Add ricotta cheese, Add sauce. Sprinkle mozzarella. Repeat layering.
  11. For the final top layer, add the pasta strip, then the rest of the meat sauce and mozzarella cheese. Sprinkle on some parmesan cheese.
  12. Cover in foil tightly and bake 55-60 minutes at about 375F. For the last 10 minutes, remove foil to let the cheese brown. [I think the foil is to prevent the cheese from burning. Is that right?]
  13. Let lasagna sit with foil covering it for another 10 minutes before you cut and serve it. [What does this final sitting step do?]
