Roasted Potato Wedges

I love fries and I love thick-cut wedge fries fresh out of the oven.

Bake these tender, herbed potatoes to perfection in about an hour.

INGREDIENTS:
2 (12-ounce) baking potatoes, each cut into 6-8 wedges
1-1/2 tablespoons olive oil
1/2 teaspoon kosher salt
1/4 teaspoon dried thyme
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon dried rosemary
1/4 teaspoon pepper

INSTRUCTIONS:
Estimated Total Time: 1 hour, 5 minutes
Preheat oven to 400 degrees.
Place potato wedges in a jelly-roll pan. Drizzle with oil; toss well. Combine salt and next 5 ingredients (salt through pepper); sprinkle over potatoes and toss. Bake at 400 degrees for 1 hour or until tender, turning once. Sprinkle with more salt before serving.

lots of carbs in potatoes so you can store up for your marathon, but you know that already

Yep it's been a big carb fest over here. I don't know what I'm doing wrong when I throw garlic in but the garlic ended up kinda burnt when I tossed them in last time.

I was trying to make those the other night and they didn't come out the way I remembered eating them a long long time ago in a distant land. Maybe I used the wrong potatoes.

I've used bunches of different potatoes but they did seem to come out best when I used either the Russets or the Yukon Gold potatoes.

Those look really good!

I actually did almost the same thing with sweet potatoes for lunch today, and they were very delicious... I'd definitely recommend trying it with the sweet potatoes, because the savoury spices go really well with the sweetness of the yams, and it's wonderful!

I do these with sweet potatoes and spice with cumin, coriander and a bit of cayenne. Yummy.
