Grape Pickers Potatoes

I first learned of this recipe about 12 years ago while watching a PBS chef out of Florida. His explanation of the origin of the name was that the dish originated in France and Belgium. It was prepared and taken to the vineyard to serve the pickers so they could eat quickly and get back to work. I have made the dish with various cheeses, but found that cheddar was unsatisfactory because it added to much oil to the dish and required a lot of draining prior to serving.
